Recipe (Makes 12)
Ingredients:
3/4 cup sunflower seeds (optional, ground)
3/4 cup sesame seeds (optional, ground)
2 tbsp tahini
3 tbsp maple syrup or raw honey
2 tbsp beetroot powder
1/2 cup desiccated coconut
1/2 cup dates (pitted, soaked in warm water for 10 mins)
Optional: 2 tbsp cacao nibs for extra crunch
Directions:
In a food processor, combine soaked dates and tahini until a sticky paste forms.
Add sunflower and sesame seeds, beetroot powder, desiccated coconut, and your choice of sweetener. Blend until well combined.
Fold in cacao nibs if using.
Press the mixture firmly into a lined tray or container.
Refrigerate for at least 1 hour to set. Slice into bars and store in the fridge for up to 7 days.
